Perfect Summer Weather at Night Should Be Illegal

Long post title, I know. But who wouldn’t be frustrated when it’s been cloudy and humid ALLLLLLL day until 8pm at night when the sun decides to make its first appearance??? *Sigh* That’s what I get for needing to buckle down on my summer schoolwork!
Well, needless to say, today has actually been decently productive. I FINALLY finished the summer homework that’s due July 16th (the day of my surgery), and even did a little more reorganizing after last night’s massive search for my missing sock. It feels good to have things a little more settled before my surgery… less to think about when I’m not physically able to do much.
After a busy evening last night, I had a snack of a Chobani 0% with Peach, the last of my Dr. Kracker Seeded Spelt Crackers, and an organic Cameo apple before heading to bed.
My obsession with cereal continued this morning. After waking up and taking a shower, I poured myself a bowl of Kashi Warm Cinnamon Heart to Heart topped with 1 tbsp organic almond butter and vanilla light soymilk, with a side of an organic peach.
Wow, I just realized that I’m getting pretty close to the edge of the counter there… that could have been a disaster!
I spent my morning running errands and going for a 2.5 mile walk in the icky humid heat. Augh, definitely not as fun as a sunny, humid-free day!
Before I knew it, lunch was calling out to me. Today’s menu featured another yummy platter! On the plate:
- organic carrot sticks
- organic cucumber with black pepper
- organic cauliflower
- Lisanatti Almond Cheddar Cheese Alternative
- Mary’s Original Gone Crackers
With a peach activia light and a small glass of V8 fusion.
I spent a good deal of my afternoon finishing up my schoolwork and proofreading my final copy. When I needed a break, I decided a bit of yoga was needed.
Today I did a 45 minute Power Vinyasa Flow #2 from Yoga Downloads. A little bit too repetitious, but definitely a keeper! My arms sure got a workout from this session! The instructor had me going straight from plank to upward dog without changing the position of my feet. Strange, but a surprising workout!
After yoga, I got a snack together of a Stonyfield Probiotic yogurt mixed with Udi’s Cranberry Granola, with a side of an organic plum and a sparkling iced green tea.
Dinner this evening was a delicious Manicotti a la my mom.
I had a pile of steamed broccoli on the side as well as a glass of organic skim milk.
This evening, I’m planning on doing the final proofreads of my schoolwork and probably just relaxing with a book. Hope everyone has a wonderful weekend planned!

Manicotti looks SOOO good!!
And yay for a productive day, despite the hot and humid weather…but I see you’ve been eating appropriately to the hot weather….all easy, cooling food! Yum~

I HATE humidity!!!
On the bright side, at least you got lots done today! It’ll be way less stressful going into surgery knowing you dont have a bunch of things you need to try to get done afterwards!!
Haha – I always get WAY TOO CLOSE to the edge as well, and i never realize it until im taking a picture, trying not to get the edge in there lol. Ive never even heard of Manicotti but it looks delicious!

Yup, cannelloni and manicotti are VERY similar. The only technical difference is that manicotti uses pre-shaped noodles/tubes, whereas cannelloni usually uses ones that are handmade.
