*As adapted from Kelsey‘s recipe.*
- 1/4 cup organic pinto beans
- 1/4 cup organic black beans
- 3 tbsp Newman’s Own Farmer’s Garden Salsa
- Reduced Fat Feta Cheese Crumbles
- 1 large zucchini
In a small bowl, mix together the beans and Salsa.
Slice the zucchini in half and seed/pit the insides.
Spoon the bean+salsa mixture into the pitted zucchini and top with light feta. Bake at 375* for 30 minutes.
