Happy Monday morning!!! I love the feeling of a brand new week ahead, open with possibility and opportunity! That, and Monday mornings are the only morning I don’t have to get up for a morning class. 😉
Last night we were hit with an INSANE storm in Madison. I’ve heard of golf ball-sized hail, but I think last night was the first time I actually experienced it firsthand! I was teaching yoga on the second floor where we have an entire wall that is made of floor-to-ceiling windows when the storm began. Hail was flying at the windows and there was actually a few moments that I worried the glass might break! Luckily I survived, but until midnight there was quite the show of hail, wind, pouring rain, and lightning.
Before heading to the studio last night, I made sweet potato rounds topped with cinnamon, nutmeg, and ginger with MaraNatha organic raw almond butter for dipping.
With a glass of unsweetened almond milk.
Although the sweet potato round were fabulous, this was slightly depressing:
I obviously love my cinnamon. 😉
I was up at 6:15am this morning to get a dent on some reading I have to do for class. First thing first…

I was back to my usual Starbucks this morning.
It seriously makes me happy when they use the old logo on the cup holders. I’m still protesting the
ugly new logo.
The storm passed over last night, so it looks like we’re in for another fabulous Spring day! With only 2 classes on Mondays, I’m ready to start my week out right! 🙂

After all the sunshine yesterday, it appears Mother Nature got a little worn out and decided to give us another gray day today. But it is 50*F, so I’m looking forward to getting outside for another 4-mile walk this afternoon!
My Sunday morning started at 6:15am with a bowl of Annie’s Bunny Love cereal topped with unsweetened soymilk and cinnamon, with an organic banana on the side.
I got my caffeine boost this morning from a local coffee shop that brews Ancora Coffee. I like how Ancora has a very rich and intense flavor, but I still say my favorite coffee is Starbucks. 🙂

I got my study on this morning and even ended up getting my laundry done before lunchtime rolled around. I tend to be extremely productive on gloomy days!
I was so excited to try out this Superfood Energy Salad I picked up at Whole Foods yesterday for my lunch. It looked AMAZING and the ingredients were incredible.
With a bottle of seltzer.
The verdict? Absolutely disgusting!!! I couldn’t believe how gross the salad tasted! The veggies were flavorless, there were too many red onions, the cashews were chewy… and I tried SO hard to like it! I tried the dressing and I swear it quite literally tasted like vomit, and that’s being kind. :( It was after I put the dressing on that I knew the salad was a major fail. I cut my losses and ate the dried figs (those were at least delicious!) and put together a quick alternative lunch instead.
Sometimes prepackaged goods just don’t hit the mark, and this was definitely one of those times. Whole Foods, I still love you! 😉
Time to head outside and get some exercise!
