One Week of Summer Starts NOW

Life is finally starting to calm down and get back to normal for me after being gone for a week and needing to play catch-up.  This is a VERY good thing, because one week from today I’ll be starting the dreaded SUMMER SCHOOL

Nope, not looking forward to summer school whatsoever… especially since it only really feels like I have a week of summer vacation!  I’m taking 2 classes this summer, so from June 13th through August 9th I’ll be hitting the books.

Luckily, taking summer classes means that I’ll have a MUCH easier schedule when it comes to the Fall and Spring semesters.  Last semester was brutal to say the least and I don’t ever want to experience that stress again if I can help it!

  

Last night I had a surprise run-in with my oldest big bro… we live in the same city, yet it seems like we rarely get see each other.  Seriously love that guy and miss him so dang much!!! 

What do a brother and sister do on a hot Sunday summer night at 7:30pm?  Go to Starbucks for Decaf White Mocha Light Frappuccinos of course. Winking smile

We had A LOT to catch up on, and of course it was just great to see him and get a hug from my big brother! Smile

   

Getting back in my usual routine to start the week, breakfast this morning was a bowl of Nature’s Path Whole O’s topped with unsweetened almond milk and a mountain of cinnamon, with an organic banana on the side.

I got way too much accomplished in the morning for summer vacation.  So after lunch I headed out on my apartment’s terrace to get some sun and magazine time!

It was 90*F today and I was LOVING the heat!!!

 

Being a broke college student, I took up a friend’s request to babysit her two boys this evening.  Babysitting really isn’t my thing (kids in general really aren’t my thing Winking smile), but her boys are pretty awesome and know how to distract themselves without getting into too much trouble.

I was in a bit of a rush to head out the door, so I grabbed one of these to hold me over.

LOVE Naan, but not the best food to keep my hunger at bay until 9:30pm.  Needless to say, a snack is happening ASAP!

Two Down, Three to Go!

Finals are in full swing!  I had my Design Studies exam yesterday, and finished my 10-page essay for Intro to Asia that counts as our final exam last night.  I have 3 more left – one on Sunday, Tuesday, and Thursday – and then I’m DONE with my Freshman year of college!!!  It feels like such a relief to have the first two accomplished, and I’m sure I’ll make it through the other 3 just fine!

 

With all the craziness of finals, I haven’t been all too creative with eats, but I did manage to make some FABULOUS sweet potato rounds a couple night ago…

Organic sweet potato rounds topped with cinnamon, nutmeg, and ginger, with MaraNatha raw organic almond butter for dipping and a glass of unsweetened almond milk on the side.

I also recently tried out Living Harvest Hempmilk after Matt recommended it to me.  Now, I will say right away that Matt told me to get unsweetened, but my Whole Foods doesn’t carry unsweetened so I just had to make do with the original.

Honestly?  I wasn’t the biggest fan.  I’m not big on any sweetened milk product in general, and this hempmilk just had an “off” taste to me that could have been the sweetening or could have just been the milk itself.  That said, I’m always willing to try something new, and I’ve heard awesome things about hempmilk and its health benefits, so it’s totally worth a shot.  And I’ll obviously have to give the unsweetened version a try once I can get my hands on it!

 

Today’s agenda consists of a lot of studying and classes… can’t wait until I’m done in one week! Smile

Crunch Time

With only two weeks left of school (three weeks including finals), I am definitely starting to feel the pressure!  I have SO much to do that I literally will not be able to do it all.  Every single one of my 5 classes has a final plus at least one other assignment/paper/project/presentation due before the end of the semester.  It’s a lot to throw at me!
  

That said, I’m doing my best to stay stress-free and just handle each day as it comes. My strategy yesterday?  Walking 6 miles in the afternoon to Picnic Point, and then another 4 miles on Lakeshore Path before it was dark.  10 miles of walking in one day!  That did me WONDERS.  Plus, on the way back of my second walk I got to enjoy these views:

Last night I also had a baked sweet potato – one of my favorites.  What do you do when your cookie sheet is dirty?  Use the pie pan of course! Winking smile

Unplanned

This morning was completely uncharacteristic of me. 
  

It started out normal – I got out of bed at 5:45am and went right to the kitchen to have breakfast… 

Kashi 7 Whole Grain Puffs topped with organic raw pumpkin seeds, unsweetened almond milk, and cinnamon, and an organic banana on the side.

After breakfast, I started thinking about getting my day started, but then I realized how tired I was, and all I wanted to do was crawl back in bed. Being a Saturday, a figured what the heck? and crawled back in here until 9am.

It’s a decent Spring day in Madison, so after lunch I was ready to get outside and go for a 4-mile walk.  On my way back from my walk, I stopped in the grocery store and bought a few staples.

Later this afternoon, I worked on a group project for my Environmental Science class.  We had to site an imaginary landfill in Door County, following a specific criteria set by the State to pick out the ideal location, write a cover letter, and fill out a form for submitting our proposal.  In class, we have to do a presentation on our landfill site and why we chose it.  Of my 3 other group members, only one guy showed up, so we ended up doing the entire thing by ourselves. This really doesn’t bother me since I know that if I’m the one who does it, I’ll make sure I do a good job, but I still think it’s pretty rude for the other guys to just not show up.  Either way, we finished within an hour and it feels good to have it done! 🙂

Welcome to Wednesday

Welcome to another fabulous Wednesday everyone!

Fabulous being the key word.  It’s supposed to get up to 68*F today, and I plan on making the most of it, given that there’s SNOW predicted for this weekend.  That’s Wisconsin for you… 80*F and 30*F in the same week. 😉

 

Before heading to teach a Power Yoga class last night, I had what is a typical evening snack for me – Doctor Kracker Seedlander Flatbread, organic pink lady apple, and Stonyfield 0% plain yogurt topped with cinnamon.

For years I have been obsessed with Doctor Kracker!  I love every single flavor of their flatbreads, and they also have amazing “Snacker Krackers” that are basically a miniature version of the flatbreads in cracker form.

The nutrition is also noteworthy on these, although I mostly dig them for the taste!

This morning I had another bowl of Kashi Simply Maize (my review can be found here) topped with unsweetened almond milk and an organic banana on the side.

I was totally surprised and impressed that this cereal held me over 4-5 hours yesterday.  That’s definitely something to mention, considering I didn’t think it seemed like the most satisfying cereal right after eating it.  I still don’t think I’d purchase it again, but it’s good to know that Kashi is still coming out with quality cereals!

 

Another busy day ahead, but I wouldn’t have it any other way! 🙂
