Finalsofficially” started today at UW Madison, but I’ve been lacking in the sleep and general life department for the past 2 weeks or so.  I just have to hang in there until Thursday, and then I’ll be free until June 13 – when my summer classes start.

 

This morning I had a 7:45am exam for my Intro to Buddhism class.  I’ve been joking that I’m studying for my Monk Exam to get into the monastery, and the 7:45am exam on a Sunday morning had to do with rebelling against Christian church services. Winking smile  Luckily, I’m pretty sure I made it into the monastery – aka passed the final!
 

Before my exam, I had a breakfast of a bowl of Kashi GoLean Cereal topped with unsweetened almond milk and an organic banana on the side.

I tried to relax a little today since it was SO nice outside… I was wearing shorts and a tank top and was totally comfortable!  I went for a 6-mile walk this afternoon and studied for a bit outside in the sun.  LOVE IT!
 

Later this afternoon and I had a snack of organic raspberries (it’s been forever since I’ve had raspberries!), Fage 0% greek yogurt, an organic kiwi, and a Trilogy Kombucha.

Scheduling + Snow = My Tuesday In a Nutshell

Happy Tuesday lovely people! 

Long story short, today is my day to schedule for classes next year, and it’s been a stressful morning so far to say the least.  To add to the fun, it’s a SNOWSTORM outside!!!

Another normal April day in my world! ;)  And the scheduling is all just a part of being a college student, so I’m sure I’ll get through it just fine. 🙂

  

After my successful grocery shopping trip yesterday, I broke into the goods right away!
 

For lunch I wanted to try the organic heirloom tomato I had bought, so I decided to top off a wrap with it:

Food for Life Brown Rice Tortilla topped with Wild Wood super firm raw tofu, organic spinach, organic mache, and sliced organic heirloom tomatoes.

With organic green beans, a light activia, and a glass of unsweetened almond milk.

Heirloom tomatoes?  Definitely my thing!  Loved them!

 

For an afternoon snack between classes, I tried out one of the organic Ataulfo mangos I bought…

… with an organic kiwi, Fage 2% Greek yogurt, and a Botanic No 7 Organic Raw Kombucha (all just-purchased items).

The mango was fabulous – perfectly ripe!  And it’s been a while since I had a Botanic Kombucha – actually a lot better than I remembered! Less perfume-y tasting maybe?

   

Now it’s back to more schoolwork and scheduling… 3:30pm is my time slot.  Wish me luck! 🙂

Spring = Produce!

Glad everyone enjoyed my 7 Random Facts from this morning! :)  It was fun to choose a few things about me that I might not have otherwise had a chance to share on the blog.

 

The sun FINALLY made an appearance today!  It was crazy windy and a little chilly, but as long as there’s sun I can deal with it.  I went for a walk this afternoon and took a picture on my phone looking out over Lake Mendota.

Recently I’ve started to notice the produce abundance growing at the grocery store now that Spring is finally here.  Let’s just say that I am taking full advantage of it!  There is nothing better than loads of fresh fruit and vegetables in warm and sunny Summer months. 🙂
 

Here’s a few of my produce-filled eats from yesterday and today:

Time to Celebrate!

DONE!!!!!!!  My absolute college insanity of studying/mid-terms/essays/exams is officially over… until finals. Let the celebration begin!!!

I had 2 exams today – Design Fundamentals and Statistics – and I could tell they both went VERY well.  Now it’s time to relax, finally get some sleep, and get caught up on life in general!  I already have a 3 coffee get-togethers with 3 different friends set up this week, so I’m definitely getting back to the social side of life. 
 

Food

I was having a discussion with Matt from The Athlete’s Plate yesterday about Eros Organic Greek Yogurt, a new Greek yogurt available at Whole Foods.  We both agreed that although its creamy texture is fabulous, the taste is a bit off… almost plastic-y.  Nonetheless, the creaminess makes up for the taste and it ends up being totally addicting, so of course I had to have one last night as a snack! 😉

For lunch today, I broke out the new Yogurt Cheese I got at Trader Joes the last time I was there.

Fact: I eat about 3 yogurts a day and tend to avoid all other dairy products, so I figured “Yogurt” Cheese had to be up my ally. 😉

Layered on a Food for Life Gluten Free Tortilla with organic spinach and organic romaine.

The cheese was delicious!!!  The taste reminded me of a cross between Farmer’s Cheese and Provolone.  And as far as texture and whatnot, I didn’t notice any difference from regular cheese.  I’ll definitely be buying again!

Making My Way One Exam at a Time

First off, THANK YOU everyone again for the wonderful birthday wishes!  It was a low-key day, but I loved it.  My oldest brother called me in the evening, and it was wonderful to chat with him.  We’re planning a brother-sister get-together as soon as my workload calms down! :) 

On that note, my “busiest week of college to date” is slowly lessening in intensity as I get through the mega-list of exams.  This morning I had an Environmental Geology exam that I think went decently well.  Sometimes it’s tough to know how you did on an exam right after taking it, and that’s how I felt with this one.  So we’ll just have to wait and see!

Before my exam, I had a breakfast of a bowl of Trader Joe’s Organic Golden Flax cereal topped with unsweetened almond milk with an organic banana on the side.

This was the first time I tried this cereal, and I must say that I really like it!  It seems to hold me over quite well too, which is always a bonus for a hectic college student’s life. 🙂

After breakfast, I taught an 8am Yoga class at the studio before heading out to my exam in the Geology building WAYYYYYY the heck out in the middle of nowhere on campus.  Seriously, the UW Madison campus IS the city of Madison.  I walk about 4 miles alone just getting to my classes!  I actually don’t mind it at all when the weather is nice, but when today’s temperatures are like this (the bottom one is outside)…

… I’d rather the building be a bit closer.

   

This afternoon I had a typical snack:  Synergy, organic kiwi, organic blackberries, and a Fage 0% Greek yogurt.

It’s been way too long since I’ve had blackberries.  SO good!
 

I’m taking an Intro to Buddhism class this semester, and this afternoon we literally meditated the entire class (1 hour and 15 minutes).  A certified meditation teacher came in and led the mediation, so it was actually a neat experience.  Although I’m a Yoga practitioner, I don’t normally meditate!  It was great to get a peek into another aspect of the practice.  Have you done any meditation before… on your own or with an instructor?
 

Tonight is another low-key evening… I’m heading to a Power Yoga class and hoping to get some more studying done!  I love Thursdays because we all know tomorrow is FRIIIIIDAYYYY! 😀
