Before heading out to teach a Hot Power Flow yoga class, I put together another take on my hummus plate:

Organic red peppers, organic baby carrots, sliced and toasted Kangaroo Whole Wheat with Honey pitas, Athenos Black Olive Hummus, and a glass of unsweetened organic soymilk.

Yup, this is definitely a Make It Your Own kind of dish!

 

The yoga class last night was packed and high-energy – I love teaching that kind of class!  Iā€™m usually back to my apartment around 10pm, but I stayed after and chatted with a friend who took the class.  As much as I loved catching up with her (sheā€™s got my sense of humor, so obviously we could talk for hours on end), I didnā€™t get back to my place until 10:30pm and was exhausted.

I had planned to finish up some reading for my Stats class, but decided instead to set the alarm for 5am and get everything done this morning.  That would have been great if I would have fallen asleep right away, but my mind would NOT turn off last night!  Iā€™m assuming it had to do in part from the energetic yoga class and chat with my friend.  I finally drifted off at 12:30am ā€“ leaving me with 4.5 hours of sleep this morning. Iā€™m tired, but Iā€™ll live. šŸ˜‰

 

I started off this morning with a bowl of Natureā€™s Path Optimum Banana Almond topped with unsweetened almond milk and an organic banana on the side.

Of course, I made a coffee run to Starbucks ā€“ Tall Komodo Dragon Blend with an inch of steamed soy.

My to-do list is packed this morning ā€“ reading a chapter in Stats, dropping off a package at the Post Office, AND grocery shopping at Whole Foodsā€¦ all before 10:00amTime to be productive!!!

Make It Your Way

Last Wednesday I went to a local coffee shop and ordered their ā€œDeluxe Hummus Plate.ā€  I was IN LOVE!!!  The only downside was that, with my own added carrots and drink, this cost me about $5.82.  That seemed incredibly steep to me!
  

So, being the savvy and creative person I am, I decided to make my own version, AND use only the foods I actually wanted!

Hereā€™s what I came up with:

Two sliced and toasted Whole Wheat with Honey Kangaroo pitas (note the whole grain upgrade), organic baby carrots, Athenos Black Olive Hummus, and a glass of unsweetened almond milk.

Total estimated price?  $1.85!!!
   

Iā€™ll admit thereā€™s something about having it made up for me thatā€™s nice, but itā€™s definitely not worth the extra $4.00.  And by making it myself, I get to choose the specific foods that Iā€™m craving and know exactly whatā€™s going into the food I eat!

The Amazing… and Then That Other Stuff

My Wednesday was eventful to say the least!  I was on the go almost all day, and had quite a few adventures along the wayā€¦ foodie and otherwise. So letā€™s dive right in!
 

Lunch was absolutely incredible today ā€“ I had a Food for Life Gluten free Tortilla topped with raw Wild Wood super firm tofu (yes, I do enjoy eating my tofu raw), organic spinach, organic mache, and organic sliced red peppers.

With sliced organic cucumbers, light activia, and a glass of unsweetened almond milk.

After my Design Studies lecture this afternoon, I stopped into the grocery store to grab a few staples.

  • Smartwater (yes, I was thirstyā€¦ I didnā€™t just buy it with one bottle missing ;))
  • Paper towel (aka napkins in my world)
  • Food for Life Brown Rice Gluten Free Tortillas
  • organic green beans
  • organic mangos
  • organic kiwi

Later this afternoon, I was walking back from my Psych Stats class and had just gotten into the door of my apartment when I noticed a hornet on my bright yellow Victoriaā€™s Secret PINK crops.  Of course, my first reaction was to hit the darn thing off me!  Unfortunately, the hornet took that moment to sting me.

*Insert  ā€œscream, collapsing in shock onto the floor, tears, and a panicked phone call to my mom asking what I should doā€  here.*

God, hornet stings are PAINFUL!  I think the shock was what really got me, because I tend to be decently pain-tolerant, but it was still pretty bad. 

I iced it right away:

This was taken about 5 minutes after the sting:

Within 30 minutes, the bulls-eye lessened and a 3-inch diameter bright red circle appeared around it with more swelling.  The pain is much better now (4 hours later), but I STILL feel it!  CRAZY!

I still had to walk 2 miles to get to my Geology Discussion, so that was quite a trip given that the sting happened 30 minutes before.  I brought an ice pack along with me to class and told my TA I should get extra credit for my effortā€¦ he just laughed. Little did he know I wasnā€™t kidding. šŸ˜‰

  

Given THAT whole situation, I wanted something totally simple for dinner after discussion, so I decided to stop into a coffee shop near my apartment and get a ā€œDeluxe Hummus Plateā€ that I had been eyeing up every time I got coffee there in the morning.

Hereā€™s what they gave me:  Warmed and slightly toasted pita triangles, goat cheese, kalamata olives, sliced tomatoes, sliced cucumbers, and a HUGE tub of hummus.

Hereā€™s what I ended up with:  I nixed the olives (I canā€™t stand kalamata olives!), and added in some organic carrots and a glass of unsweetened almond milk.

This was one of the best meals Iā€™ve had in a while!  Itā€™s been FOREVER since Iā€™ve had hummus and this was delicious.  The pitas were AMAZINGā€¦ soft, warm, ever-so-slightly toasted.  HEAVENLY!  Iā€™ll definitely be stopping back to get this again soon!

  

After dinner, I wanted to make the most of the warm weather while itā€™s still here, so I went out for a 4 mile walk along Lakeshore Path.  It was getting windy and a little chilly by the time I got back, but the walk itself was perfect!
  

I have a little more schoolwork to do, then Iā€™m calling it a night.  Iā€™m exhausted from all of todayā€™s events and need to catch up on some shut-eye!
